In the store system 239 countries are included. They can be used to calculate shipment and vat costs from each country. All can be disabled individually.
To find the list, from the admin panel go to System >> Localisation >> Countries
A country can be completely deleted from the store. If you do so, all information within it will also be deleted. That means, if any case you must add the country back, then the information will also have to be entered from scratch.
